The Fierro Group Inc., doing business as Rico Brands, is recalling four varieties of ready-to-eat enchilada meals, including Cheese Enchiladas and Chicken Enchiladas with Rice and Beans. These products are being recalled because they were made with Queso Fresno cheese that has the potential to be contaminated with Listeria monocytogenes. No illnesses or injuries have been reported to date in connection with these products, which were sold at supermarkets throughout Utah.
Listeria monocytogenes is an organism that can cause serious and sometimes fatal infections in young children, frail or elderly people, and others with weakened immune systems. Listeria infection can also cause miscarriages and stillbirths among pregnant women. Healthy individuals may suffer only short-term symptoms such as high fever, severe headache, stiffness, nausea, abdominal pain, and diarrhea.
